I’ve been invited to BBQ tonight and I love to take these opportunities to make dishes I love but never seem to make at home. One of my favorites is a Creamy Bacon Cauliflower Salad. It’s a two-day process – make the night before, then toss and serve. This is the basic recipe, but it’s so versatile you can add whatever you want to it. I’ve combined broccoli with the cauliflower, added sweet peas, and diced red bell pepper among other items such as sunflower or pumpkin seeds. Here’s the bare basic recipe to use as you make your own creation. Enjoy!
Creamy Bacon Cauliflower Salad
½ head iceberg lettuce torn into bite size pieces
1 medium head cauliflower cut into bite size pieces
¼ red onion sliced or diced
½ lb. bacon (oh heck – 1 lb. if ya want!) cooked and crumbled
2 cups mayo (I’ve used lite and it works well)
2-3 tbsp. white sugar (depending on how sweet you like it)
1 cup shredded or grated GOOD parmesan cheese, none of that powdered shaker stuff
In a large glass mixing bowl layer the lettuce, onion, cauliflower and bacon. Combine mayo and sugar and mix well. Spread evenly over top of the salad, sprinkle with cheese, cover and refrigerate for overnight or 24-hours. Toss gently before serving.
Again, any additions you make, just add to the initial layers. Ya can’t go wrong with this one – it’s a crowd pleaser!
