Mac Attack…and I’m not talking burgers…

Macaroni (mac) salad is a staple in Upstate NY.  You’ll find it probably at every social gathering you go to and I think that’s the only place were a lot of restaurants offer it on their menu as a side.

Here’s my Mom’s tried and true recipe.  I’m not giving specific measurements for the ingredients…it’s all up to you and your taste.  Prepare a few hours before serving to let the flavors meld.  It’s so simple, but so good!  Enjoy!!

1 lb. box of macaroni cooked, drained and cool

Diced carrots

Diced celery

Diced and seeded cucumber

Diced bell pepper (I prefer red or yellow)

Green onions sliced thinly w/ some of the greens


Lemon juice or apple cider vinegar



Mix all ingredients together.  Store in the refrigerator until ready to serve.  Taste before serving and add more mayo, etc. if needed.
